The Fish
At “La Rosetta” the Seafood
is delivered every morning and evening. The evening delivery has
been expressly selected by, Marco, Massimo Riccioli’s trustworthy
helper. Every afternoon from Monday to Friday the fishermen enters
the ports of Lazio (Civitavecchia, Terracina and Anzio) with their
catch, and Marco selects carefully and buys the fish that will be
served at La Rosetta the same evening. This procedure has been followed
for years as a part of restaurant's philosophy which guarantees
the quality, the freshness and diversity of the selected menu.

Seafood is a Mediterranean culinary treasure, and the object of
Italian pride and boasting. The Italians have also known how to
valorize the seafood with simple and essential ingredients heightening
the taste and the aroma. Nutritionists and diet doctors suggest,
they even recommend, an increase in the consumption of fish and
seafood for people at all ages. Nevertheless according to a recent
poll, there are still few people eating fish regularly. Partly because
people by mistake think fish is less nourishing than meat, partly
because fish is more expensive and also because people find it difficult
to select, prepare, clean and cook.
