The Chef
Massimo Riccioli, the chef and creative soul of the restaurant, is a great
connoisseur of flavours and has always been driven by cultural gastronomic
curiosity – a fact substantiated by his numerous journeys in Europe,
America and the Far East . On his journeys, he strives to acquire new
culinary knowledge which he then complements with his gastronomical experience.
The prerogative of his cooking is the extraordinary freshness of the fish
which he favours to be cooked shortly only so as not to distort the identity
and the essence of the fish, bringing out its full flavour and aroma.
The exclusive and incomparable delicacies are the result of putting together
ingredients which obtain complex flavours with extraordinary equilibriums.
